Sunday night dinner prep: Happy rich broccoli, fettuccine, hot italian sausage, and my new knife!!

I sauteed some onions & cooked them in the tomato sauce along with the sausage.  We had some red wine left over from about 2 weeks ago which wasn’t really drinkable so I decided to toss it in and let it simmer a bit.  Honestly, I wasn’t to sure how to cook the happy rich – does it cook quickly & I just toss it in last minute? or is it like broccoli that needs more time to cook? I decided to put it in once the meat was almost cooked because if it needed more time it would continue to cook once I mixed in the pasta.

I drained the fettuccine & mixed it all together in the pan.  Perfect quick & easy Sunday night dinner! Yumm
